- 1 pound Italian sausage, casings removed
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese, plus more for serving
- 1/4 cup reserved pasta water
- 5 ounces fresh spinach
- Salt to taste
- Black pepper to taste
Instructions
- Cook spaghetti according to package directions. Reserve 1/4 cup pasta water before draining.
- While spaghetti cooks, heat a large skillet over medium heat. Add Italian sausage and cook, breaking it up with a spoon, until browned and cooked through. Drain excess fat.
- Add butter and minced garlic to the skillet with the sausage. Cook for 1-2 minutes until fragrant.
- Add cooked spaghetti to the skillet. Pour in reserved pasta water and stir to combine.
- Add spinach and Parmesan cheese. Toss until spinach wilts and cheese melts, coating the spaghetti.
- Season with salt and pepper to taste. Serve immediately with extra Parmesan cheese, if desired.
