- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1/4 cup beef broth
- 1 large egg
- 1/4 cup milk
- 1/2 teaspoon Worcestershire sauce
- 1/4 cup finely ground cooked beef
- 1/2 cup shredded cheddar cheese, divided
- 4 ounces cream cheese, cut into 4 equal cubes
Instructions
- Preheat your oven to 375 degrees Fahrenheit. Grease four standard muffin cups well.
- In a medium bowl, whisk together the flour, baking soda, and salt.
- In a separate bowl, mix the melted butter, beef broth, egg, milk, and Worcestershire sauce until combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Fold in the ground cooked beef and 1/4 cup of the shredded cheddar cheese.
- Spoon half of the batter into the prepared muffin cups.
- Place one cube of cream cheese in the center of the batter in each cup.
- Top with the remaining batter, covering the cream cheese completely.
- Sprinkle the remaining 1/4 cup of shredded cheddar cheese over the tops.
- Bake for 18 to 20 minutes, or until the edges are set. The center should remain soft.
- Let the cakes cool in the pan for 5 minutes before carefully removing them. Serve warm.
Notes
- You can use pre-cooked crumbled bacon for added flavor if desired.
- For a richer beef flavor, substitute beef broth with cooled, reduced beef stock.
