- 1 tablespoon sugar

- 1/2 cup cold unsalted butter, cubed
- 1/2 cup milk
- 1 cup shredded sharp cheddar cheese
- 1 pound mixed seafood (shrimp, scallops, white fish), chopped
- 1 cup chopped celery
- 1 cup chopped carrots
- 1/2 cup chopped onion
- 4 tablespoons unsalted butter
- 1/4 cup all-purpose flour
- 2 cups chicken broth
- 1/2 cup heavy cream
- 1 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 1 egg, beaten (for biscuit wash)
Instructions
- Preheat your oven to 400 degrees Fahrenheit. Lightly grease a 9-inch pie dish.
- Make the biscuit topping: In a medium bowl, whisk together flour, sugar, salt, and baking powder. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Stir in the milk until just combined. Mix in the cheddar cheese. Drop spoonfuls of the dough over the filling in the pie dish.
- Prepare the filling: In a large skillet, melt 4 tablespoons of butter over medium heat. Add celery, carrots, and onion. Cook until softened, about 5 to 7 minutes.
- Stir in 1/4 cup flour and cook for 1 minute, stirring constantly.
- Gradually whisk in the chicken broth until smooth. Bring to a simmer and cook until slightly thickened.
- Stir in the heavy cream, thyme, and pepper. Add the mixed seafood and cook until the seafood is heated through, about 3 to 5 minutes. Do not overcook.
- Pour the seafood mixture into the prepared pie dish.
- Arrange the cheddar biscuit dough evenly over the filling. Brush the tops of the biscuits with the beaten egg.
- Bake for 25 to 30 minutes, or until the filling is bubbly and the biscuits are golden brown.
- Let the pie cool for 10 minutes before serving.
Notes
- You can use frozen mixed seafood if you thaw and drain it well before use.
- For a richer flavor, substitute half of the chicken broth with dry white wine.
