- 1 lb ground beef
- 1 cup riced cauliflower, cooked and squeezed dry
- 1/2 cup shredded cheddar cheese
- 1/4 cup breadcrumbs
- 1 egg
- 1/4 cup chopped onion
- 1 clove garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine ground beef, riced cauliflower, cheddar cheese, breadcrumbs, egg, onion, garlic, salt, and pepper.
- Mix gently until just combined. Do not overmix.
- Roll the mixture into meatballs, about 1.5 inches in diameter.
- Place the meatballs on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes, or until browned and cooked through.
