Description
A simple, creamy soup featuring cauliflower and cheddar cheese with mixed vegetables.

- 1 head cauliflower, chopped
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 medium onion, chopped
- 4 cups vegetable broth
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup milk
- 1 cup shredded sharp cheddar cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Melt butter in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened, about 5 minutes.
- Stir in flour and cook for 1 minute.
- Gradually whisk in vegetable broth until smooth.
- Add cauliflower. Bring to a boil, then reduce heat and simmer until cauliflower is tender, about 15 minutes.
- Remove about 1 cup of soup mixture and blend until smooth. Return the blended mixture to the pot.
- Stir in milk and heat through, do not boil.
- Remove from heat. Stir in cheddar cheese until melted.
- Season with salt and pepper.
Notes
- For a thicker soup, use less broth or add more flour when making the roux.
- You can substitute broccoli florets for some of the cauliflower.
