Description
A refreshing gelatin salad featuring carrots, pineapple, and walnuts.
Ingredients

- 1 (6 ounce) package orange flavored gelatin
- 2 cups boiling water
- 1 (8 ounce) can crushed pineapple, undrained
- 1 cup finely grated carrots
- ½ cup chopped walnuts
Instructions
- Dissolve gelatin in boiling water.
- Stir in undrained crushed pineapple.
- Refrigerate until slightly thickened.
- Fold in grated carrots and chopped walnuts.
- Pour into a 9×13 inch dish or individual molds.
- Refrigerate until firm, about 4 hours or overnight.
Notes
- For a lighter version, use sugar-free gelatin.
- Add a dollop of whipped cream or a sprinkle of shredded coconut before serving.
