Ingredients

  • 1 cup fresh orange juice
  • 1/2 cup pitted dates
  • 1/4 cup shredded coconut
  • 1/4 cup almond flour
  • 1/4 cup chopped walnuts
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • Pinch of nutmeg
  • Zest of 1 orange

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9-inch tart pan with parchment paper.
  2. In a food processor, combine pitted dates, shredded coconut, almond flour, and chopped walnuts. Process until a sticky dough forms.
  3. Press the dough evenly into the prepared tart pan to form the crust.
  4. In a large bowl, combine grated carrots, fresh orange juice, vanilla extract, cinnamon, nutmeg, and orange zest. Mix well.
  5. Pour the carrot mixture over the crust in the tart pan.
  6. Bake for 30-35 minutes, or until the filling is set and lightly golden.
  7. Let the tart cool completely before slicing and serving.
