- 2 cups grated carrots
- 1 cup fresh orange juice
- 1/2 cup pitted dates
- 1/4 cup shredded coconut
- 1/4 cup almond flour
- 1/4 cup chopped walnuts
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- Pinch of nutmeg
- Zest of 1 orange
Instructions
- Preheat oven to 350°F (175°C). Line a 9-inch tart pan with parchment paper.
- In a food processor, combine pitted dates, shredded coconut, almond flour, and chopped walnuts. Process until a sticky dough forms.
- Press the dough evenly into the prepared tart pan to form the crust.
- In a large bowl, combine grated carrots, fresh orange juice, vanilla extract, cinnamon, nutmeg, and orange zest. Mix well.
- Pour the carrot mixture over the crust in the tart pan.
- Bake for 30-35 minutes, or until the filling is set and lightly golden.
- Let the tart cool completely before slicing and serving.
Notes
- Store leftover tart in an airtight container in the refrigerator for up to 3 days.
- For a richer flavor, you can toast the walnuts before adding them to the crust.
- Adjust the amount of cinnamon and nutmeg to your taste.
