  • 1/2 cup unsalted butter, softened

  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 2 cups peeled and sliced apples
  • 1/2 cup rolled oats
  • 1/4 cup chopped pecans (optional)
  • For the Caramel Topping:
  • 1/2 cup unsalted butter
  • 1 cup packed brown sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
  6. Fold in the rolled oats and chopped pecans (if using).
  7. Prepare the caramel topping: In a small saucepan, melt the butter over medium heat. Stir in the brown sugar and milk. Bring to a simmer and cook for 2 minutes, stirring constantly. Remove from heat and stir in the vanilla extract.
  8. Pour the caramel topping into the prepared cake pan. Arrange the sliced apples evenly over the caramel.
  9. Pour the cake batter over the apples.
  10. Bake for 40-50 minutes, or until a wooden skewer inserted into the center comes out clean.
  11. Let the cake cool in the pan for 10 minutes before inverting it onto a serving plate.
