  • 1/2 cup granulated sugar plus 1 teaspoon for yeast
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 cup strong brewed coffee, cooled
  • 1/2 cup unsalted butter, softened (for filling)
  • 1/2 cup packed brown sugar (for filling)
  • 2 tablespoons cocoa powder (for filling)
  • 1 teaspoon ground cinnamon (for filling)
  • 1/2 cup semi-sweet chocolate chips (for filling)
  • 1/2 cup caramel sauce (for topping)
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)

Instructions

  1. Combine warm milk, 1 teaspoon sugar, and yeast in a bowl. Let stand 5-10 minutes until foamy.
  2. In a large bowl, cream together 1/2 cup softened butter and 1/2 cup granulated sugar. Beat in eggs one at a time.
  3. Mix in the yeast mixture and cooled coffee.
  4. Gradually add flour and salt. Mix until a soft dough forms. Knead on a lightly floured surface for 5-7 minutes until smooth.
  5. Place dough in a greased bowl, cover, and let rise in a warm place for 1 hour, or until doubled.
  6. While dough rises, prepare the filling: Mix 1/2 cup softened butter, brown sugar, cocoa powder, and cinnamon until smooth.
  7. Punch down the risen dough. Roll it out into a 12×18 inch rectangle on a lightly floured surface.
  8. Spread the filling mixture evenly over the dough. Sprinkle with chocolate chips.
  9. Roll the dough tightly starting from the long edge. Cut the log into 12 equal rolls.
  10. Place rolls in a greased 9×13 inch baking pan. Cover and let rise for 30 minutes.
  11. Preheat oven to 375F. Bake for 20-25 minutes until golden brown.
  12. While rolls cool slightly, whisk together powdered sugar and 2 tablespoons milk to make a simple glaze.
  13. Drizzle rolls with caramel sauce, then top with the glaze before serving.

  • Use cold, strong coffee for the best mocha flavor.
  • If the dough is too sticky, add flour one tablespoon at a time during kneading.
