  • 1 teaspoon vanilla extract
  • 1/4 cup caramel sauce, for frosting
  • 1/2 cup unsalted butter, softened, for frosting
  • 3 cups powdered sugar, for frosting
  • 2 tablespoons milk, for frosting

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Line a 12-cup muffin tin with paper liners.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition.
  5. Mix in the eggnog and vanilla extract.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  7. Divide the batter evenly among the 12 cupcake liners, filling each about two-thirds full.
  8. Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean. Let the cupcakes cool completely on a wire rack.
  9. To make the frosting, beat the 1/2 cup butter until smooth. Gradually add the powdered sugar, alternating with the milk, beating until creamy.
  10. Beat in the caramel sauce until the frosting is smooth and well combined.
  11. Once the cupcakes are cool, frost them with the caramel eggnog frosting.

Notes

  • You can use store-bought eggnog or homemade eggnog for this recipe.
  • For an extra touch, sprinkle a pinch of ground nutmeg on top of the frosting.
