Decadent bite-sized cheesecakes with a rich brownie base and swirls of sweet caramel.
Ingredients

- 1 cup crushed chocolate cookies
- 3 tablespoons melted butter
- 8 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup caramel sauce
- 1/4 cup chopped pecans (optional)
Instructions
- Preheat oven to 350°F (175°C). Line a mini muffin tin with liners.
- Combine crushed cookies and melted butter. Press mixture into the bottom of each liner.
- In a bowl, beat cream cheese and sugar until smooth.
- Beat in eggs one at a time, then stir in vanilla extract.
- Spoon cream cheese mixture over cookie crust.
- Swirl caramel sauce into the cream cheese mixture.
- Sprinkle with pecans if using.
- Bake for 15-20 minutes, or until set.
- Let cool completely before serving.
Notes
- For a fudgier brownie base, use chocolate wafer cookies.
- Chill bites for easier handling.
- Store in an airtight container in the refrigerator.
