- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 16 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 medium apples, peeled, cored, and diced
- 1 tablespoon lemon juice
- 1/4 cup brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 cup caramel sauce
Instructions
- Preheat your oven to 350 degrees F. Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides.
- Combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture firmly into the bottom of the prepared pan. Bake for 10 minutes.
- While the crust bakes, beat the softened cream cheese and 1/2 cup sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla extract. Pour the cheesecake mixture over the warm crust.
- Toss the diced apples with lemon juice, brown sugar, and cinnamon. Scatter the apple mixture evenly over the cheesecake layer.
- Bake for 30 to 35 minutes, or until the edges are set but the center still has a slight jiggle.
- Remove from the oven and let cool slightly. Drizzle the caramel sauce over the top.
- Chill the bars in the refrigerator for at least 4 hours, or until completely firm, before cutting into squares.
Notes
- Use firm apples like Granny Smith for the best texture.
- You can make your own caramel sauce or use store-bought.
- For cleaner cuts, chill the bars overnight.
