- 1.5 lbs boneless, skinless chicken thighs
- 1 tbsp Cajun seasoning
- 1 tbsp olive oil
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 0.5 cup all-purpose flour
- 0.25 cup unsalted butter
- Salt to taste
- Black pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- Pat chicken thighs dry and season with Cajun seasoning.
- Heat olive oil in a large skillet or Dutch oven over medium-high heat. Sear chicken until browned on all sides, about 3-4 minutes per side. Remove chicken and set aside.
- Add butter to the skillet. Once melted, add onion, bell pepper, and celery. Cook until softened, about 5-7 minutes.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Gradually whisk in flour to create a roux. Cook, stirring constantly, for 2-3 minutes until lightly browned.
- Slowly pour in chicken broth, whisking continuously to prevent lumps. Bring to a simmer.
- Return chicken to the skillet. Reduce heat to low, cover, and simmer for 20-25 minutes, or until chicken is cooked through and gravy has thickened.
- Season with salt and black pepper to taste.
- Garnish with fresh parsley before serving.
