A simple and flavorful homemade Caesar dressing.
Ingredients

- 1 clove garlic, minced
- 2 anchovy fillets, mashed into a paste
- 1 large egg yolk
- 1 tablespoon Dijon mustard
- 2 tablespoons fresh lemon juice
- 1/2 cup olive oil
- 1/4 cup grated Parmesan cheese
- Salt and black pepper to taste
Instructions
- In a medium bowl, whisk together the minced garlic, anchovy paste, egg yolk, Dijon mustard, and lemon juice until well combined.
- Slowly drizzle in the olive oil while continuously whisking. Continue whisking until the dressing is emulsified and thickened.
- Stir in the grated Parmesan cheese.
- Season with salt and black pepper to your preference.
- Serve immediately or store in an airtight container in the refrigerator.
Notes
- For a thicker dressing, use slightly less olive oil.
- If you prefer a milder garlic flavor, you can roast the garlic clove before mincing.
- This dressing is best used within 3-4 days.
