Description

A simple and flavorful homemade Caesar dressing.


Ingredients

  • 1 clove garlic, minced
  • 2 anchovy fillets, mashed into a paste
  • 1 large egg yolk
  • 1 tablespoon Dijon mustard
  • 2 tablespoons fresh lemon juice
  • 1/2 cup olive oil
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. In a medium bowl, whisk together the minced garlic, anchovy paste, egg yolk, Dijon mustard, and lemon juice until well combined.
  2. Slowly drizzle in the olive oil while continuously whisking. Continue whisking until the dressing is emulsified and thickened.
  3. Stir in the grated Parmesan cheese.
  4. Season with salt and black pepper to your preference.
  5. Serve immediately or store in an airtight container in the refrigerator.

Notes

  • For a thicker dressing, use slightly less olive oil.
  • If you prefer a milder garlic flavor, you can roast the garlic clove before mincing.
