  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1/2 head of cabbage, shredded
  • 6 cups vegetable broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
  3. Stir in shredded cabbage and cook for another 5 minutes until it begins to wilt.
  4. Pour in vegetable broth and diced tomatoes. Add thyme, salt, and pepper.
  5. Bring the soup to a boil, then reduce heat and simmer for at least 20 minutes, or until cabbage is tender.
