Description

Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 (15-ounce) can butter beans, rinsed and drained
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1/2 cup vegetable broth
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh basil leaves, chopped

Instructions

  1. Heat the olive oil in a medium saucepan over medium heat.
  2. Add the chopped onion and cook until soft, about 5 minutes.
  3. Add the minced garlic and cook for 1 minute more until fragrant.
  4. Stir in the rinsed butter beans, diced tomatoes (with juice), vegetable broth, salt, and pepper.
  5. Bring the mixture to a simmer. Reduce heat to low, cover, and cook for 10 minutes, allowing the flavors to combine.
  6. Remove the lid and cook for another 5 minutes, stirring occasionally, until the sauce thickens slightly and some tomatoes burst.
  7. Stir in the chopped fresh basil just before serving.
