Description

Crispy egg rolls filled with a mixture resembling buffalo chicken dip.


Ingredients

  • 1 cup cooked, shredded chicken
  • 8 ounces cream cheese, softened
  • 1/2 cup buffalo wing sauce
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup blue cheese dressing
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 12 egg roll wrappers
  • Vegetable oil for frying

Instructions

  1. In a medium bowl, combine the shredded chicken, softened cream cheese, buffalo wing sauce, cheddar cheese, blue cheese dressing, garlic powder, and onion powder. Mix until well combined.
  2. Place about 2 tablespoons of the filling near one corner of an egg roll wrapper.
  3. Fold the corner over the filling. Fold in the sides.
  4. Roll the wrapper tightly toward the opposite corner, moistening the edges with water to seal. Repeat with remaining filling and wrappers.
  5. Heat about 2 inches of vegetable oil in a deep skillet or pot to 350 degrees F (175 degrees C).
  6. Carefully place 3-4 egg rolls into the hot oil, ensuring not to overcrowd the pan.
  7. Fry for 3-4 minutes, turning occasionally, until golden brown and crispy.
  8. Remove the egg rolls with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
  9. Serve immediately.

Notes

  • For baking, place egg rolls on a baking sheet, lightly spray with oil, and bake at 400 degrees F (200 degrees C) for 15-20 minutes, turning halfway, until golden.
  • Serve with extra blue cheese or ranch dressing for dipping.
