Description

These meatball subs feature juicy meatballs made with ground beef and bacon, simmered in a rich bourbon BBQ sauce, and topped with melted cheddar cheese, all served in toasted hoagie rolls.

  • 1 pound ground beef
  • 4 slices bacon, cooked and crumbled
  • 1/2 cup panko breadcrumbs
  • 1/4 cup milk
  • 1 large egg
  • 1/4 cup finely chopped onion
  • 1 clove garlic, minced
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup bourbon BBQ sauce
  • 4 hoagie rolls
  • 1 cup shredded sharp cheddar cheese
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. In a large bowl, combine ground beef, crumbled bacon, panko breadcrumbs, milk, egg, onion, garlic, Worcestershire sauce, salt, and pepper. Mix until just combined.
  2. Form the mixture into 1-inch meatballs. You should get about 24-30 meatballs.
  3. Heat olive oil in a large skillet over medium-high heat. Add meatballs and cook until browned on all sides, about 5-7 minutes.
  4. Reduce heat to low. Pour bourbon BBQ sauce over the meatballs, stirring to coat. Cover and simmer for 15-20 minutes, or until meatballs are cooked through.
  5. While meatballs simmer, preheat your oven broiler.
  6. Split hoagie rolls lengthwise, but do not cut all the way through. Place rolls on a baking sheet.
  7. Spoon a generous amount of meatballs and sauce into each hoagie roll.
  8. Top the meatballs with shredded cheddar cheese.
  9. Broil for 2-4 minutes, or until the cheese is melted and bubbly and the rolls are lightly toasted.
  10. Garnish with fresh parsley, if desired, and serve immediately.

Notes

  • For extra flavor, use a good quality bourbon BBQ sauce.
  • You can prepare the meatballs and sauce ahead of time and reheat when ready to assemble the subs.
