  • 1 cup rolled oats

  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 cup fresh blueberries
  • For the Frosting:
  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a medium bowl, whisk together the flour, rolled oats, baking soda, salt, and cinnamon.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  6. Gently fold in the fresh blueberries.
  7. Pour the batter into the prepared baking pan and spread evenly.
  8. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  10. While the cake cools, prepare the frosting. In a large bowl, beat together the softened cream cheese and butter until smooth.
  11. Gradually add the powdered sugar and vanilla extract, beating until the frosting is light and fluffy.
  12. Once the cake is completely cool, spread the cream cheese frosting evenly over the top.

Notes

  • For a richer flavor, you can use brown sugar instead of granulated sugar in the cake batter.
  • If you don’t have fresh blueberries, you can use frozen blueberries. Toss them with a tablespoon of flour before adding to the batter to prevent them from sinking.
