- 1 (6 ounce) package blackberry flavored gelatin
- 2 cups boiling water
- 1 (8 ounce) package cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 (8 ounce) container frozen whipped topping, thawed
- 1 cup fresh blackberries, for garnish (optional)
Instructions
- Dissolve blackberry gelatin in boiling water in a large bowl. Stir until completely dissolved.
- Pour half of the gelatin mixture into a 9×13 inch pan. Refrigerate for 30 minutes, or until set but not firm.
- While the first layer chills, beat softened cream cheese, sugar, and vanilla extract in a separate bowl until smooth.
- Gently fold in the thawed whipped topping into the cream cheese mixture.
- Pour the remaining gelatin mixture into the pan over the partially set first layer.
- Carefully spread the cream cheese mixture over the second gelatin layer.
- Refrigerate for at least 4 hours, or until completely set.
- Garnish with fresh blackberries before serving, if desired.
Notes
- For a richer flavor, use full-fat cream cheese.
- Ensure the first gelatin layer is set but still slightly sticky to help the cream cheese layer adhere.
- You can substitute other berry-flavored gelatins for variety.
