Instructions

  1. Dissolve blackberry gelatin in boiling water in a large bowl. Stir until completely dissolved.
  2. Pour half of the gelatin mixture into a 9×13 inch pan. Refrigerate for 30 minutes, or until set but not firm.
  3. While the first layer chills, beat softened cream cheese, sugar, and vanilla extract in a separate bowl until smooth.
  4. Gently fold in the thawed whipped topping into the cream cheese mixture.
  5. Pour the remaining gelatin mixture into the pan over the partially set first layer.
  6. Carefully spread the cream cheese mixture over the second gelatin layer.
  7. Refrigerate for at least 4 hours, or until completely set.
  8. Garnish with fresh blackberries before serving, if desired.
