- 2 cups dried black eyed peas, picked over and rinsed
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 6 cups vegetable broth
- 1 teaspoon dried thyme
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- Soak the black eyed peas in water overnight, or use the quick soak method: cover peas with water, bring to a boil for 2 minutes, then let stand for 1 hour. Drain and rinse.
- Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery and cook until softened, about 8-10 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Stir in the drained black eyed peas, vegetable broth, thyme, and smoked paprika.
- Bring to a boil, then reduce heat, cover, and simmer for 45-60 minutes, or until peas are tender.
- Season with salt and black pepper to taste.
- Serve hot, garnished with fresh parsley.
Notes
- For a spicier dish, add a pinch of red pepper flakes with the garlic.
- You can add cooked ham or bacon for a meatier flavor.
