Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into cubes
  • 3/4 cup milk
  • 1 pound breakfast sausage
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, whisk together the flour, baking powder, and salt for the biscuits.
  3. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  4. Gradually stir in the milk until just combined. Do not overmix.
  5. Turn the dough out onto a lightly floured surface and gently pat it into a 3/4-inch thick rectangle.
  6. Fold the dough in half and pat it down again. Repeat this folding and patting process two more times.
  7. Pat the dough into a 1-inch thick rectangle and cut out biscuits using a round cutter. Place biscuits on an ungreased baking sheet.
  8. Bake for 12-15 minutes, or until golden brown.
  9. While the biscuits bake, cook the breakfast sausage in a large skillet over medium heat, breaking it up with a spoon.
  10. Once the sausage is browned, remove it from the skillet with a slotted spoon, leaving the drippings behind.
  11. Sprinkle the 1/4 cup of flour over the sausage drippings in the skillet. Cook, stirring constantly, for 1 minute.
  12. Gradually whisk in the 2 cups of milk until smooth. Bring to a simmer, stirring constantly, until the gravy thickens.
  13. Return the cooked sausage to the skillet. Season with salt and pepper to taste.
  14. Serve the hot gravy over the freshly baked biscuits.

Notes

  • For flakier biscuits, ensure your butter and milk are very cold.
  • You can add a pinch of sugar to the biscuit dough for a hint of sweetness.
  • If you prefer a thinner gravy, add a little more milk.
