Ingredients

  • 1 whole chicken (about 4 lbs)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 lemon, halved
  • 4 cloves garlic, smashed

Instructions

  1. Preheat your oven to 425 degrees F (220 degrees C).
  2. Remove the giblets from the chicken cavity. Pat the chicken dry, inside and out, with paper towels.
  3. Rub the entire surface of the chicken with olive oil.
  4. In a small bowl, mix salt, pepper, and thyme. Sprinkle this mixture evenly over the chicken skin.
  5. Place the lemon halves and smashed garlic cloves inside the chicken cavity.
  6. Place the chicken in a roasting pan or oven-safe skillet.
  7. Roast for 1 hour and 15 minutes, or until the internal temperature of the thickest part of the thigh reaches 165 degrees F (74 degrees C).
  8. Let the chicken rest for 10 minutes before carving.

Notes

  • For crispier skin, you can increase the oven temperature to 450 degrees F (230 degrees C) for the first 15 minutes, then reduce it to 400 degrees F (200 degrees C) for the remainder of the cooking time.
