  • 1 cup heavy cream
  • 2 tablespoons powdered sugar (for cream)
  • 1 teaspoon vanilla extract (for cream)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, 2 tablespoons granulated sugar, baking powder, and salt.
  3. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  4. Gradually add the milk and stir until just combined. Do not overmix.
  5. Turn the dough out onto a lightly floured surface and gently pat it into a 3/4-inch thick round. Cut out 4-6 rounds using a biscuit cutter or a knife. Place them on the prepared baking sheet.
  6. Bake for 12-15 minutes, or until golden brown. Let cool on a wire rack.
  7. While the shortcakes bake, combine the sliced strawberries with 1/4 cup granulated sugar in a bowl. Let them macerate for at least 15 minutes.
  8. In a separate bowl, whip the heavy cream with the powdered sugar and vanilla extract until stiff peaks form.
  9. To assemble, split each shortcake horizontally. Place the bottom half on a plate, top with a generous amount of strawberries and their juice, then add a dollop of whipped cream. Place the top half of the shortcake on top, and garnish with more strawberries and whipped cream.
