Classic Beef Stew

Description

A hearty and comforting beef stew recipe with tender beef and vegetables.


Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 carrots, peeled and chopped
  • 3 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups beef broth
  • 1 cup dry red wine (optional)
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • 1 lb small potatoes, quartered
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Season beef cubes generously with salt and pepper.
  3. Heat olive oil in a large Dutch oven or oven-safe pot over medium-high heat. Brown beef in batches, then remove and set aside.
  4. Add onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
  5. Stir in garlic and cook for 1 minute more until fragrant.
  6. Sprinkle flour over the vegetables and stir to coat. Cook for 1-2 minutes.
  7. Gradually whisk in beef broth and red wine (if using), scraping up any browned bits from the bottom of the pot.
  8. Stir in tomato paste, thyme, rosemary, and bay leaf.
  9. Return the browned beef to the pot. Bring to a simmer.
  10. Cover the pot and transfer to the preheated oven. Bake for 2 to 2.5 hours, or until beef is very tender.
  11. Add potatoes to the pot and stir. Continue baking, covered, for another 30-45 minutes, or until potatoes are tender.
  12. Remove bay leaf. Season with additional salt and pepper if needed.
  13. Serve hot.

Notes

  • For a thicker stew, you can make a slurry of 1 tbsp cornstarch mixed with 2 tbsp cold water and stir it into the stew during the last 15 minutes of cooking.
  • You can add other vegetables like peas or green beans in the last 30 minutes of cooking.
