Simple recipe for baked chicken tacos with a spicy buffalo flavor, made without dairy.

- 1.5 lbs boneless, skinless chicken breasts
- 1 cup dairy-free buffalo sauce
- 1/2 cup dairy-free ranch or blue cheese dressing (optional)
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 12 small corn or flour tortillas
- Toppings: shredded lettuce, diced celery, dairy-free cheese shreds (optional)
Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly grease a baking dish.
- Place the chicken breasts in the baking dish. Pour half of the dairy-free buffalo sauce over the chicken.
- Bake for 20 to 25 minutes, or until the internal temperature of the chicken reaches 165 degrees Fahrenheit (74 degrees Celsius).
- Remove the chicken from the oven. Shred the chicken using two forks directly in the dish.
- Mix the shredded chicken with the remaining half of the buffalo sauce and the garlic powder, salt, and pepper until fully coated.
- Warm the tortillas according to package directions (oven, microwave, or skillet).
- Fill each warm tortilla with the buffalo chicken mixture.
- Add your desired toppings like lettuce, celery, and optional dairy-free cheese. Serve immediately.
Notes
- For crispier tacos, place the filled tortillas on a baking sheet and bake for 5-7 minutes after filling.
- If you prefer more heat, add a dash of cayenne pepper to the chicken mixture.
- You can substitute chicken thighs for breasts if desired; adjust cooking time slightly.
