Creamy deviled eggs with mashed avocado.


Ingredients

  • 12 large eggs
  • 1 ripe avocado
  • 2 tablespoons mayonnaise
  • 1 tablespoon fresh lime juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Paprika for garnish (optional)

Instructions

  1. Place eggs in a single layer in a large saucepan. Cover with cold water by 1 inch. Bring to a boil over high heat. Remove from heat, cover, and let stand for 12 minutes.
  2. Drain eggs and transfer to a bowl of ice water. Let stand until completely cooled, about 15 minutes.
  3. Peel eggs and cut in half lengthwise. Carefully remove yolks and place in a medium bowl. Place egg white halves on a serving platter.
  4. Add avocado, mayonnaise, lime juice, salt, and pepper to the bowl with the yolks. Mash with a fork until smooth and creamy.
  5. Spoon or pipe the avocado mixture into the egg white halves.
  6. Garnish with paprika if desired.
  7. Chill until ready to serve.

Notes

  • For easier peeling, use eggs that are a few days old.
  • Adjust seasonings to your taste.
  • These are best served the same day they are made.
