Description

A moist and flavorful cake made with olive oil, apples, and cinnamon.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup granulated sugar
  • 1/2 cup olive oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 2 medium apples, peeled, cored, and diced

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch cake pan.
  2. In a large bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, combine the sugar and olive oil. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  5. Fold in the diced apples.
  6. Pour the batter into the prepared cake pan and spread evenly.
  7. Bake for 35-45 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.

Notes

  • You can use any type of apple you prefer.
  • For extra flavor, you can add a tablespoon of lemon juice to the batter.
  • Serve with a dusting of powdered sugar or a drizzle of honey.
