Description
A recipe for making classic apple cider donuts.

- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup unsalted butter, melted
- 1 cup apple cider
- Vegetable oil, for frying
- 1/2 cup powdered sugar (for coating)
- 1/4 cup granulated sugar (for coating)
- 1 teaspoon ground cinnamon (for coating)
Instructions
- Whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt in a large bowl.
- In a separate bowl, whisk the granulated sugar and eggs until pale.
- Stir in the melted butter and apple cider.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Cover the dough and chill for at least 1 hour.
- Roll the chilled dough out on a lightly floured surface to about 1/2 inch thickness.
- Use a donut cutter to cut out donut shapes. Reroll scraps and cut again.
- Heat vegetable oil in a deep pot to 360 degrees F (182 degrees C).
- Carefully drop donuts into the hot oil, frying 2-3 at a time. Fry for about 1-2 minutes per side until golden brown.
- Remove donuts with a slotted spoon and drain on paper towels.
- Combine the powdered sugar, granulated sugar, and cinnamon for the coating in a shallow dish.
- While donuts are still warm, toss them in the sugar coating until fully covered.
- Place coated donuts on a wire rack to cool slightly before serving.
Notes
- For a thicker coating, toss the donuts in the sugar mixture twice.
- If you do not have a donut cutter, you can use two different-sized round cutters.
- You can reduce the amount of oil used by baking the donuts instead; bake at 375 degrees F (190 degrees C) for 10-12 minutes.
