Instructions
- Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 10-cup Bundt pan.
- In a small saucepan, reduce the apple cider over medium heat until you have about 1/2 cup of thick cider syrup. Set aside to cool slightly.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract and the cooled cider syrup.
- In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
- Pour the batter into the prepared Bundt pan.
- Bake for 45 to 55 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
- Prepare the glaze: In a small saucepan, melt the 1/4 cup butter. Stir in the brown sugar and 1 teaspoon of cinnamon. Cook over medium heat until the sugar dissolves, about 2 minutes. Remove from heat and let cool for 5 minutes.
- Whisk the powdered sugar and milk/cream into the cooled butter mixture until smooth.
- Brush or drizzle the warm glaze generously over the cooled cake. Allow the glaze to set before slicing and serving.
Notes
- For a stronger apple flavor, you can reduce the cider further, aiming for 1/3 cup of syrup.
- If you do not have buttermilk, mix 1/2 cup of regular milk with 1/2 teaspoon of white vinegar or lemon juice and let it sit for 5 minutes before using.
- You can use a simple powdered sugar glaze if you prefer a thinner coating: mix 1 cup powdered sugar with 2-3 tablespoons of milk.
