Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup melted unsalted butter
  • 3 (8 ounce) packages cream cheese, softened
  • 1 1/4 cups granulated sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 2 cups sliced fresh strawberries
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • Whipped cream for serving

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch springform pan.
  2. In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press mixture into the bottom of the prepared pan. Bake for 10 minutes. Let cool.
  3. In a large bowl, beat cream cheese and 1 1/4 cups sugar until smooth. Beat in flour and vanilla. Add eggs one at a time, beating after each addition. Stir in sour cream.
  4. Pour mixture over the cooled crust.
  5. Bake for 50-60 minutes, or until the center is set. Turn off oven and leave cheesecake in oven with door slightly ajar for 1 hour.
  6. Remove from oven and let cool completely on a wire rack. Refrigerate for at least 4 hours or overnight.
  7. In a medium bowl, combine sliced strawberries, 1/4 cup sugar, and lemon juice. Let sit for 15-20 minutes to macerate.
  8. Top cheesecake with macerated strawberries and whipped cream before serving.

Notes

  • Make sure cream cheese is fully softened for a smooth batter.
  • Do not overmix the batter after adding eggs.
  • Chilling the cheesecake overnight results in the best texture.
