A versatile marinade for authentic Al Pastor flavor.
Ingredients

- 1 cup achiote paste
- 1/2 cup white vinegar
- 1/4 cup pineapple juice
- 1/4 cup orange juice
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Combine achiote paste, white vinegar, pineapple juice, orange juice, minced garlic, oregano, cumin, salt, and pepper in a blender.
- Blend until smooth.
- Pour over your desired protein (pork, chicken, or tofu) and marinate for at least 30 minutes, or up to 4 hours.
Notes
- For a spicier marinade, add 1-2 minced chipotle peppers in adobo sauce.
- This marinade can also be used for vegetables.
