All Purpose Al Pastor Marinade

Description

A versatile marinade for authentic Al Pastor flavor.


Ingredients

Scale
  • 1 cup achiote paste
  • 1/2 cup white vinegar
  • 1/4 cup pineapple juice
  • 1/4 cup orange juice
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Combine achiote paste, white vinegar, pineapple juice, orange juice, minced garlic, oregano, cumin, salt, and pepper in a blender.
  2. Blend until smooth.
  3. Pour over your desired protein (pork, chicken, or tofu) and marinate for at least 30 minutes, or up to 4 hours.

Notes

  • For a spicier marinade, add 1-2 minced chipotle peppers in adobo sauce.
  • This marinade can also be used for vegetables.
