  • 8 oz feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the cut potatoes in a large bowl.
  3. Drizzle the potatoes with olive oil, minced garlic, oregano, salt, and pepper. Toss to coat evenly.
  4. Spread the seasoned potatoes in a single layer on a baking sheet.
  5. Bake for 25 minutes.
  6. Remove the baking sheet from the oven and sprinkle the crumbled feta cheese over the potatoes.
  7. Return the baking sheet to the oven and bake for another 10 to 15 minutes, or until the potatoes are tender and the feta is lightly golden.
