Description

Celebrate the 4th of July with a festive red, white, and blueberry cobbler.


Ingredients

  • 6 cups mixed berries (strawberries, blueberries, raspberries)
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon lemon juice
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into cubes
  • 1/2 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 375°F (190°C). Butter a 9×13 inch baking dish.
  2. In a large bowl, gently mix the berries, 1/2 cup sugar, cornstarch, and lemon juice. Pour into the prepared baking dish.
  3. In a separate bowl, whisk together the flour, 1/2 cup sugar, baking powder, and salt.
  4. Cut in the cold butter with a pastry blender or your fingers until the mixture resembles coarse crumbs.
  5. In a small bowl, whisk together the milk, egg, and vanilla extract.
  6. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
  7. Drop spoonfuls of the biscuit topping over the fruit mixture.
  8. Bake for 35-45 minutes, or until the topping is golden brown and the fruit is bubbly.
  9. Let cool slightly before serving.

Notes

  • You can use fresh or frozen berries. If using frozen, do not thaw them first.
  • Serve warm with vanilla ice cream or whipped cream.
  • Store leftovers in the refrigerator for up to 3 days.
