Description
Celebrate the 4th of July with a festive red, white, and blueberry cobbler.
Ingredients

- 6 cups mixed berries (strawberries, blueberries, raspberries)
- 1/2 cup granulated sugar
- 2 tablespoons cornstarch
- 1 teaspoon lemon juice
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup cold unsalted butter, cut into cubes
- 1/2 cup milk
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 375°F (190°C). Butter a 9×13 inch baking dish.
- In a large bowl, gently mix the berries, 1/2 cup sugar, cornstarch, and lemon juice. Pour into the prepared baking dish.
- In a separate bowl, whisk together the flour, 1/2 cup sugar, baking powder, and salt.
- Cut in the cold butter with a pastry blender or your fingers until the mixture resembles coarse crumbs.
- In a small bowl, whisk together the milk, egg, and vanilla extract.
- Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
- Drop spoonfuls of the biscuit topping over the fruit mixture.
- Bake for 35-45 minutes, or until the topping is golden brown and the fruit is bubbly.
- Let cool slightly before serving.
Notes
- You can use fresh or frozen berries. If using frozen, do not thaw them first.
- Serve warm with vanilla ice cream or whipped cream.
- Store leftovers in the refrigerator for up to 3 days.
