Description
A quick and flavorful Italian sausage pasta dish with fresh spinach and mushrooms, perfect for a weeknight meal.

- 1 pound Italian sausage, casings removed
- 8 ounces pasta (penne, rotini, or farfalle)
- 1 tablespoon olive oil
- 8 ounces mushrooms, sliced
- 3 cloves garlic, minced
- 5 ounces fresh spinach
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese, plus more for serving
- Salt and freshly ground black pepper to taste
Instructions
- Cook pasta according to package directions. Drain, reserving about 1/2 cup of pasta water.
- While pasta is cooking, heat olive oil in a large skillet over medium-high heat. Add Italian sausage and cook, breaking it up with a spoon, until browned. Remove sausage from skillet and set aside.
- Add mushrooms to the same skillet and cook until softened and browned, about 5-7 minutes.
- Add minced garlic to the skillet and cook for about 1 minute until fragrant.
- Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
- Return the cooked sausage to the skillet. Pour in the heavy cream and bring to a simmer.
- Add the cooked pasta and Parmesan cheese to the skillet. Toss to combine, adding a little reserved pasta water if needed to create a smooth sauce.
- Season with salt and pepper to taste.
- Serve immediately, with extra Parmesan cheese if desired.
Notes
- For a spicier dish, use hot Italian sausage.
- You can substitute other vegetables like bell peppers or zucchini.
- If you don’t have heavy cream, you can use half-and-half, but the sauce may be thinner.
