Quick and easy vegetable stir-fry noodles ready in 15 minutes.
Ingredients

- 8 ounces dried stir-fry noodles
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 teaspoon grated fresh ginger
- 2 cloves garlic, minced
- 1 cup broccoli florets
- 1 cup sliced bell peppers (any color)
- 1 cup sliced carrots
- 1/2 cup snap peas
Instructions
- Cook noodles according to package directions. Drain and set aside.
- While noodles cook, whisk together soy sauce, sesame oil, rice vinegar, ginger, and garlic in a small bowl.
- Heat a large skillet or wok over medium-high heat. Add vegetables and stir-fry for 5-7 minutes, or until tender-crisp.
- Add cooked noodles and sauce to the skillet. Toss to combine and heat through.
- Serve immediately.
Notes
- You can use any vegetables you like.
- Add cooked protein like chicken or tofu for a complete meal.
- Adjust the amount of sauce to your preference.
